Chicken and root vegetables — burdock, lotus root, taro — all simmered together in a classic sweet-soy broth. The burdock gives this dish its signature earthy crunch and a good dose of fiber. Root vegetables and dashi together: one of those combinations that feels deeply, unmistakably Japanese. And yes — this is Kaa-chan's personal favorite nimono.
