Grated daikon radish, a type of yakumi (a fresh, aromatic or peppery accompaniment added alongside a dish to bring out its flavor). In Japanese cooking, you'll often find a small mound of grated daikon placed next to tamagoyaki, grilled fish, tempura, or meat dishes like hamburger steak and grilled steak. It's not just decoration — the digestive enzymes and the sharp, peppery compound in grated daikon actually help break down fatty food and cut through richness. It's genuinely tasty eaten on its own too, cool and slightly peppery. Whenever Kaa-chan gets back from a trip abroad, the first thing Kaa-chan eats is grated daikon topped with shirasu (boiled young fish) with a splash of soy sauce over it — that's the moment it really feels like being home again.

大根をすりおろした、薬味(料理の味を引き立てるために添える、香りや辛みのある食材のことだよ)の一つだよ。和食のメニューには、卵焼きや焼き魚、天ぷら、ハンバーグやステーキなどの肉料理の横に、大根おろしがちょこんと添えられていることがよくあるよ。実はこれ、ただの飾りじゃなくて、消化を助ける酵素や、独特の辛み成分が、脂っこい料理をさっぱりさせてくれる役割があるの。そのまま食べても、みずみずしくてピリッと美味しいんだよね。母ちゃんは海外旅行から帰ってくると、必ずこれにしらす(稚魚を茹でたもの)をのせて、醤油をかけて食べるの。それでやっと「帰ってきた」って実感するくらい、体に染みる組み合わせなの。
