Kitsune Udon (or Soba)

Udon or soba topped with a large piece of abura-age (oil-fried tofu skin) that's been simmered in a sweet-savory soy sauce until juicy. Bite in and the dashi and sweet cooking liquid flood out. The name 'kitsune' (fox) comes from a folk belief that fried tofu is a fox's favorite food. Also available as 'Aka-i Kitsune' (赤いきつね), one of Japan's most beloved instant cup noodles — worth picking up as a souvenir.
