A Nagoya specialty — firm, chewy udon simmered in a rich red miso-based broth until deeply flavored. The dense miso soup and the al-dente noodles are an acquired taste that becomes very hard to give up. In Tokyo, miso nikomi udon tends to be milder with lighter dashi and softer noodles. In Nagoya, the authentic version uses 100% hatcho miso and noodles so firm they have a bite at the very center. Try both cities if you get the chance — they really are different dishes.

濃い目の赤味噌ベースの出汁で、コシの強い硬めのうどんを煮込んだ名古屋の名物料理だよ。深みのある濃密な味噌スープと、噛みごたえのある麺の組み合わせがクセになる味わいなの。 ちなみに東京で食べる味噌煮込みうどんは、出汁を効かせて食べやすくアレンジされたものや、モチモチした麺を使うことが多いんだよね。一方で名古屋の本場のお店だと、豆味噌100%の濃いスープに、芯が残るほど硬い麺を煮込むのが主流なの。東京と名古屋で食感も味わいも全然違うから、食べ比べてみるのも面白いよ。
