Grilled eel glazed in a rich, sweet soy sauce, served over rice in a lacquer box (unaju) or bowl (unadon). A luxury dish — but deeply beloved and worth trying at least once in Japan. There is a custom of eating eel on a specific midsummer day for stamina; on that day, queues at eel restaurants can be long.
